I was taking a peek through my recipe book Angelicious the other day. The only problem with my book is that it’s full of so many deliciously healthy recipes, that I never know where to start!
On this occasion I was looking for an easy side dish. There is indeed something for every occasion, bakes, veggies burgers, gluten-free pasta dishes, raw food sweet treats, baked desserts, breakfast inspiration, dips, dressings & super-healthy salads…. Most of the recipes are really easy too.
My philosophy in the kitchen is that food prepared from the heart, using healthy, plant-based ingredients not only nurtures your mind, body & spirit, but it sends ripples out, making the world a better place.
My other philosophy is that less is more! Yes, on occasion, I can be extravagant in the kitchen… although I always seem to revert back to my simplistic roots of wanting to create delicious things, easily, with as few ingredients as possible.
Easy Coconut Mint Potato Patties
These Mint Potato Patties are an excellent way to use up left over plain, boiled potatoes (if you ever have any left over that is – otherwise, do what I do… boil a batch up especially – it’s definitely worth it!).
Not only do these patties make a fabulous hot or cold accompaniment to a salad or main meal, they will work pretty much anywhere you’d normally use potatoes.
Creamed Coconut (of course)…
If you’ve been following my website for anytime now, you’ll know that I am a big fan of creamed coconut (which is different to coconut cream and comes in the form of a block). So, you won’t be surprised to find it as one of the 4 ingredients in these patties. It’s a Conscious Kitchen essential after all! It works absolute wonders. - 3 potatoes (medium to large)
- 50g creamed coconut (1/4 of a block or use coconut butter)
- 1 teaspoon sea salt
- Handful fresh mint
