It's incredibly rewarding to see a few extraordinary ingredients, melt in the pot together, to create a divine, alchemical blend of sensual deliciousness. There's nothing quite like a bit of Homemade Artisan Chocolate. Chocolate has been given a bad rap over the years, mainly owing to the refined sugar, dairy, additives and ethics of it. [...]
Less is so often more. I am amazed at how five simple ingredients can dance together to create cosmic alchemy in the kitchen. Today's no-bake Carob Cosmos Bars are naturally vegan, gluten-free and without refined sugar, as you would expect from Trinity's Conscious Kitchen. They are energizing, and delicious endowed with super healthy ingredients. Carob [...]
Most recipes that I make are only ever made once, on the spur of the moment - divinely inspired in the here-and-now, never written down or even remembered. I am a retreat chef (amongst the many other, varied things that I do), catering for groups of between 8 and 24 guests. I make everything up [...]
I am having a flashback moment! About 14 years ago, when I lived near Brighton, in Sussex, I used to host raw-vegan potlucks. People would come from, all-over, near and far, bringing along a dish of something tasty to share. It was a real joy to see what the table would fill up with every [...]
Oh yes - the Raw Hemp Energy Balls are here! Hemp is one of natures finest superfoods. I am not talking about the stuff that gets you high. I am talking about the hempseed that is available in any good health food store; the tiny, nutty, seed that has the perfect balance of omega 3 [...]
When you get the blend of chocolate just right, then that melting bite transports you to other realms of consciousness. Its culinary alchemy has the power to make being in this rather chaotic world, oh so much more divine. And let's face it, we all need some of that every now and again! This is [...]
Cardamom! This highly prized ancient spice has an intense, aromatic flavour that brings out the best in both sweet and savoury dishes. In some countries it has a well celebrated reputation as an aphrodisiac, in other countries you'll find people chewing on the seeds to freshen breath and to discourage harmful bacteria in the mouth. [...]
No matter what crazy things are going on in life, when I enter my kitchen, it's a haven of peace. It's my sanctuary from the 'storm', whatever what is going on in the crazy world 'out there'. It's my heartfelt expression of culinary alchemy. It brings me so much joy to see which ingredients want [...]
It's no secret that I love making my own chocolate. The secret is to buy good organic, fairly traded ingredients and make it with love. Most people who haven't created this delectable treat before assume that it's complicated. Once you know how you'll see that it is really easy. Not only that, you'll find that [...]
Let's talk about feel-good comfort food! Sometimes you just want something that has a perfect moist cake texture whilst giving you a sweet (but not sugary sweet) 'ahhhhh' moment - leaving you feeling satiated, yet not bloated. Now we're talking! My good friend Oliver aka 'Banana Man' (who I affectionately named, because he's crazy, crazy, [...]
Giving a gift is an opportunity to really express our heart and soul. Giving speaks volumes of the compassion that we feel toward others. Giving a gift is also an opportunity to express how much we care about the world around us. When I give gifts, I want to make sure that I am celebrating [...]
This is a special feature from my recipe book Angelicious, along with my latest step-by-step Bakewell Tart video guide. Bakewell tart is a popular English confection dating back to the 1800s. The traditional recipe essentially breaks down into three parts: (i) a short crust pastry base (ii) jam filling (iii) an almond-infused, sponge topping. I [...]
I love dispelling the myth that healthy food can't be absolutely delicious. There's something really satiating about eating a dessert that not only tastes scrumptious, but is also full of healthy ingredients. My 'Fig-a-licious Vegan Tart' is free from diary, egg, wheat, gluten, refined sugar and it STILL tastes delectable. We absolutely love this one [...]
I spent years and years without fudge! It's ordinarily laden with dairy and sugar, so I steered well clear of it. Then, a few years back, I discovered creamed coconut. It transformed my culinary experience forever. Creamed coconut is the dehydrated fresh flesh of a mature coconut, which has been ground into a semi-solid white [...]
Puddings that take two minutes to make are definitely at the top of my to-go list when I am looking for something tasty. This pudding is so simple that you can whip it up in a flash and be tucking into it a few short moments later. It originally featured in my recipe book Trinity's [...]
Energy bites and balls have taken the world by storm in recent years. They are rather ingenious and usually super easy to make. Energy balls are so versatile that you could create a different version every day for the rest of your life! Which-ever ingredients I use, my creations always burst forth with nutrients and [...]
In my early years of healthy eating I'd always make ice cream with frozen banana, fruits and cashew or tahini. It's absolutely decadent and super easy to make. In more recent times I've explored a myriad of different ways to make ice cream without an ice cream machine... all with delicious results. I've never owned an [...]
When I first adopted a totally plant-based diet, some 21 years ago, things like cheesecake went completely fell by the wayside. Vegan recipes hadn’t yet taken the world by storm and in those earliest days of compassionate eating, I did keep my culinary creations more basic. However, a few years later at a vegan gathering, I was thrilled to learn that not only was it possible to create a vegan version of cheesecake, but it could taste amazing.
Blueberries and lemon are a match made in heaven. They dance and twirl on the taste buds creating an exquisite medley of flavours. In this recipe, I’ve added them to one of my all time trusted and favourite ingredients: ‘creamed coconut’, to create a decadent, soft fudge. It’s very rich, yet you needn’t feel guilty, because all of the ingredients are good for you. It’s easy to feel satiated with only one or two small squares too. They make an excellent treat or gift, and with only 4 ingredients, are quick and simple to make.
When I first made these truffles I thought I was going to melt with delight. Perhaps it was a reflection of the multi sensory experience when I took my first bite; soft, sweet, rich, melt in the mouth chocolate covered sensual deliciousness. Difficult to imagine so much from such an easy recipe with only 5 ingredients. Yet, using good quality organic ingredients (including raw homemade chocolate), makes the essence of these truffles quite divine.
Traditionally halva is an simple sweet treat often made with tahini or other nut butters and something sweet (like sugar or honey). When I first started eating a totally plant based diet I stumbled across a halva made with sesame seeds and grape juice. It sounds insanely simple, but it just works.
This isn’t just any old high protein treat, it’s a superfood extravaganza – high in essential fats and antioxidants. In fact, it is so insanely healthy, I have to pinch myself when that decadent flavour hits my palate! I am a big fan of foods that not only infuse my body with an abundance of nutritional goodness, but taste good too. The modern world has been polluted with so many unhealthy, addictive foods to allure and diminish our health… so for those of us who have turned the tables and reclaimed our well-being with conscious cuisine – let’s show the world how delicious healthy food can be!
Macadamia nut & cocoa are a marriage made in chocolate heaven. Add in fruit (in this case – raisins), coconut sugar (a much healthier alternative to refined sugar) and vanilla and you’ll quickly find a divine medley of exciting textures, flavours and melt in the mouth deliciousness...
This afternoon I really felt like something chocolatey. I was about to go on a hike and wanted something that would give me an energy boost and keep me satiated, without making me feel heavy. This recipe is ridiculously easy to make and very quick to whip up. Perfect for times when you really can’t be fussed about spending much time baking or cooking. From the moment you decide that you want it, you can literally be tasting this delicious pudding within two minutes.
Home made conscious chocolate is one of those decadently delicious, rewarding joys in life – not least, a perfect way to share with friends from the heart! As a health seeker who didn’t eat chocolate for many years, I relented a while back after finding a way to create conscious, healthy chocolate. Made with quality ingredients, it can be a nourishing treat to be savoured and enjoyed… in gentle moderation, of course.
The festive season has an incredible reputation for encouraging less-than-healthy eating. Yet, with a little extra care and consideration we can still enjoy super-healthy celebrations, whilst knowing that every morsel that we eat and share with family and friends can be filled with health affirming goodness.
Whilst working diligently on my new recipe book, I just had to stop and share one of the latest tasty treats as it emerges from my kitchen – because I know how excited most of us get at the thought of consciously created cookies!
It seems like an eternity since I made my first raw carrot cake, some 15 years ago. A small group (4 of us) formed the ‘Raw Pudding Club’ – we’d gather before lunch, all bringing the most delicious raw desserts (with an occasional salad on the side ? ). We’d spend 12 hours straight endulging, chatting, learning, laughing, crying and inspiring one another with anything from food to optimal health to bushcraft skills or even how to fix your car. My ‘Raw Pudding Club’ friends will always have a special place in my heart…
As with all of my recipes this has no dairy, no refined sugar and is made with the biggest heart full of love. The recipe itself is super quick to make (although you do need to remember to soak the nuts and dates ahead of time). It has always been a real winner with just about everyone I know.
Plums! If you get a really super-ripe, juicy one, it can pretty majestic. When I moved into my house here in Avalon about 8 years ago, we had a massive plot full of rubble, grass and invasive non-native weeds. One of the first things I did (one of the first things I always do when moving somewhere new) was plant a good old, reliable, heavy cropping Victoria Plum tree. I don’t know how she does it, but she has been bearing a mighty harvest of plums ever since. As I write, it’s late August and she’s wildly overflowing with ripe plums. I am having such a great time with plum recipes and can’t contain myself any longer. So here goes…
These delicious, crunchy, easy-to-make biscuits are a real favourite here. It’s actually been a miracle that I caught a photo of them at all, given that they tend to fly out of the kitchen before I manage to get my camera out. Being gluten-free, vegan, free from egg, dairy and refined sugar, these chocolate chip [...]
Sometimes all you need is a simple biscuit, so I came up with a tasty little treat. The delicate hint of warming spices entwines softly with a playful infusion of lemon and orange zest; whilst the date that sweetens this biscuit balances and brings the best out in everything. Spelt works well in this recipe [...]
I remember how tasty shop bought, coconut chocolate bars seemed to be back in the days when I ate that ‘regular’ kind from the store. I’d enjoy them for a moment of indulgence; get a sugar kick; a brief feeling of euphoria; then I’d experience that uncomfortable ‘I know this wasn’t good for me’ sort [...]
I adore finding healthful ingredients, full of antioxidants, vitamins and all round nutritional goodness, weaving them together to create delicious, fun, healthy, indulgent treats. I created these for my own sweetheart this morning – they certainly are the perfect thing to gift to a friend or lover and really show that you care on so [...]
Cakes might be alluringly delicious, but they are typically full of all sorts of stuff that don't really do our health any favours. So, I am on a bit of a mission to find some delicious alternatives created with healthy, nutritious ingredients, that work for people with most food allergies and sensitivities (dairy-free, wheat-free, gluten-free, [...]
Making chocolate is always a popular topic of conversation amongst my friends, so I’ve decided to make my first recipe video a step by step guide to creating your very own raw vegan chocolate. Most people who haven’t created this delectable treat before assume that it’s complicated. Once you know how you’ll see that it is really easy. Not only that, you’ll find that you can create it consciously, infusing your love into it, making it taste absolutely delicious...
We’ve just enjoyed the most awesome ‘loved-up’ raw, no-bake, chocolate brownies and I am really excited to share the recipe. You’ll need a strong blender or even better, a decent food processor to create them. The thing I love about these raw chocolate brownies is that they offer great nutritional value as well as being [...]
A deliciously healthy and light cake. Vegan, spelt and free from refined sugar.
Cupcakes and muffins make me think of my mam. When I was a little lass, she always, always made time to bake – no matter how many jobs she had to hold down. I remember the joy of diving into our kitchen after climbing trees and playing tag; excitedly scrambling for a plate of delicious [...]
