When I first adopted a totally plant-based diet, some 21 years ago, things like cheesecake went completely fell by the wayside. Vegan recipes hadn’t yet taken the world by storm and in those earliest days of compassionate eating, I did keep my culinary creations more basic. However, a few years later at a vegan gathering, I was thrilled to learn that not only was it possible to create a vegan version of cheesecake, but it could taste amazing.
Blueberries and lemon are a match made in heaven. They dance and twirl on the taste buds creating an exquisite medley of flavours. In this recipe, I’ve added them to one of my all time trusted and favourite ingredients: ‘creamed coconut’, to create a decadent, soft fudge. It’s very rich, yet you needn’t feel guilty, because all of the ingredients are good for you. It’s easy to feel satiated with only one or two small squares too. They make an excellent treat or gift, and with only 4 ingredients, are quick and simple to make.
When I first made these truffles I thought I was going to melt with delight. Perhaps it was a reflection of the multi sensory experience when I took my first bite; soft, sweet, rich, melt in the mouth chocolate covered sensual deliciousness. Yet, using good quality organic ingredients (including raw homemade chocolate), makes the essence of these truffles quite divine.

It seems like an eternity since I made my first raw carrot cake, some 15 years ago. A small group (4 of us) formed the ‘Raw Pudding Club’ – we’d gather before lunch, all bringing the most delicious raw desserts (with an occasional salad on the side ? ). We’d spend 12 hours straight endulging, chatting, learning, laughing, crying and inspiring one another with anything from food to optimal health to bushcraft skills or even how to fix your car. My ‘Raw Pudding Club’ friends will always have a special place in my heart…
As with all of my recipes this has no dairy, no refined sugar and is made with the biggest heart full of love. The recipe itself is super quick to make (although you do need to remember to soak the nuts and dates ahead of time). It has always been a real winner with just about everyone I know.
Plums! If you get a really super-ripe, juicy one, it can pretty majestic. When I moved into my house here in Avalon about 8 years ago, we had a massive plot full of rubble, grass and invasive non-native weeds. One of the first things I did (one of the first things I always do when moving somewhere new) was plant a good old, reliable, heavy cropping Victoria Plum tree. I don’t know how she does it, but she has been bearing a mighty harvest of plums ever since. As I write, it’s late August and she’s wildly overflowing with ripe plums. Sometimes all you need is a simple biscuit, so I came up with a tasty little treat. The delicate hint of warming spices entwines softly with a playful infusion of lemon and orange zest; whilst the date that sweetens this biscuit balances and brings the best out in everything. Spelt works well in this recipe as a nutritionally superior and healthier alternative to its distant hybridised cousin wheat. I also negate the need for diary by using organic coconut butter, making for a well rounded, healthy, sweet treat. I use mixed spice in this recipe, which is a blend of warming, sweet spices commonly used in Britain that typically includes cinnamon, ginger, nutmeg, allspice and cloves. I remember how tasty shop bought, coconut chocolate bars seemed to be back in the days when I ate that ‘regular’ kind from the store. I’d enjoy them for a moment of indulgence; get a sugar kick; a brief feeling of euphoria; then I’d experience that uncomfortable ‘I know this wasn’t good for me’ sort of feeling (thankfully for me, that was over 20 years ago now).
