Roast Cashew Soup with Butternut Squash & Ginger (dairy-free, vegan)

This is well and truly the soup of the month here in Trinity's Kitchen. A firm reader favourite from my book Angelicious. Most of the time involved in creating this soup is spent waiting for things to bake and cook quietly in the background, whilst you can be getting on with something else in the [...]

How to make chocolate at home (super quick guide)

It's no secret that I love making my own chocolate. The secret is to buy good organic, fairly traded ingredients and make it with love. This is a special feature from my recipe book Angelicious, along with my latest step-by-step Bakewell Tart video guide. Bakewell tart is a popular English confection dating back to the 1800s. The traditional recipe essentially breaks down into three parts: (i) a short crust pastry base (ii) jam filling (iii) an almond-infused, sponge topping. I [...]

Coconut Chocolate Fudge w/ creamed coconut – only 4 ingredients, dairy-free, vegan

I spent years and years without fudge! It's ordinarily laden with dairy and sugar, so I steered well clear of it. Then, a few years back, I discovered creamed coconut. It transformed my culinary experience forever. Creamed coconut is the dehydrated fresh flesh of a mature coconut, which has been ground into a semi-solid white [...]

Creamy Coconut Chickpea Curry Recipe (and why I love fair-trade ingredients)

A curry is a dish of food pieces cooked in a richly, spiced sauce. Every region of the world has it's own style and technique, often inspired by whatever is available locally. My Magic Porridge Pot Recipe (gluten-free, dairy-free, no sugar)

During the chillier months of my childhood, I’d often bounce down to the kitchen for breakfast, all wrapped up in a bundle of warm clothes, to find a pot of oat porridge bubbling away. It was a bit of a staple morning time meal back then, living near the chilly borders of Scotland. Scotland provides [...]

Crustless Vegan Quiche – gluten-free, egg-free, dairy-free

Traditionally, a quiche is an open, pastry flan dish, made with eggs, milk, a wheat-based crust and filled with whatever is in season. Of course, here at Trinity's Kitchen, I don't do anything 'traditionally', instead, creating my cuisine with dairy-free, egg-free and wheat-free ingredients. I must admit, 'back in the day', I used to love [...]

Strawberry ‘No-Cheeze’ Cake – (gluten-free, vegan, no-bake)

When I first adopted a totally plant-based diet, some 21 years ago, things like cheesecake went completely fell by the wayside. Vegan recipes hadn’t yet taken the world by storm and in those earliest days of compassionate eating, I did keep my culinary creations more basic. However, a few years later at a vegan gathering, I was thrilled to learn that not only was it possible to create a vegan version of cheesecake, but it could taste amazing.

Grilled ‘Falafel Carrot Burgers’ (glutenfree, vegan)

Falafel originated in the Middle East and has since become a popular alternative to meat. These days, it makes a regular appearance in fast food trucks and health food outlets all over the western world. It is typically deep fried, although I’ve always opted to create a much healthier baked or grilled alternative.

Thai Coconut Curry with kaffir lime leaves and butternut squash

The recipe I am sharing here today, totally excites my taste buds with a tantalizing medley of warming spices. This ‘Thai Coconut Curry’, uses kaffir lime for a tangy kick; cardamom pods for an exquisite burst of sweet, spicy excitement; coriander, turmeric and lots of other delicious things. I use creamed coconut to give it a full tropical coconut experience (see below for more about the coconut that works best for this recipe).

Blueberry & Lemon Fudge with creamed coconut (4 ingredients)

Blueberries and lemon are a match made in heaven. They dance and twirl on the taste buds creating an exquisite medley of flavours. In this recipe, I’ve added them to one of my all time trusted and favourite ingredients: ‘creamed coconut’, to create a decadent, soft fudge. It’s very rich, yet you needn’t feel guilty, because all of the ingredients are good for you. It’s easy to feel satiated with only one or two small squares too. They make an excellent treat or gift, and with only 4 ingredients, are quick and simple to make.

Raw chocolate covered walnut truffles – with excellent omega 3 health benefits

When I first made these truffles I thought I was going to melt with delight. Difficult to imagine so much from such an easy recipe with only 5 ingredients. Yet, using good quality organic ingredients (including raw homemade chocolate), makes the essence of these truffles quite divine.

Chocolate covered halva bars – indulgent but healthy!

Traditionally halva is an simple sweet treat often made with tahini or other nut butters and something sweet (like sugar or honey). When I first started eating a totally plant based diet I stumbled across a halva made with sesame seeds and grape juice. It sounds insanely simple, but it just works.

In fact, it is so insanely healthy, I have to pinch myself when that decadent flavour hits my palate! I am a big fan of foods that not only infuse my body with an abundance of nutritional goodness, but taste good too. The modern world has been polluted with so many unhealthy, addictive foods to allure and diminish our health… so for those of us who have turned the tables and reclaimed our well-being with conscious cuisine – let’s show the world how delicious healthy food can be!

Sweet Stuffed Pepper with Beet & Sunflower Seeds (video) gluten-free, vegan

I adore finding new and healthful ways to incorporate beetroot into my weekly diet. Beetroot is often over-looked as an 'I-don't-know-what-to-do-with-it' type food. Well worthy of our attention, it is ridiculously healthy - right up there with the healthiest of foods.

Ginger Stir Steamed Veggies with Coconut Sauce (glutenfree, vegan)

I've been making 'stir-steamed' veggie dishes for quite some time now. It's our super easy, healthy, 'fast food' go to meal. If I serve this with gluten free noodles, then I can literally have it on the table ready to eat within 10 minutes of deciding to make it. It's that quick! It's a bit of a take on the traditional chinese stir-fry, except the only thing that is fried is one quick minute of garlic. The vegetables are essentially steamed in a very small amount of water, right there in the pan.

Fruit n’ Macadamia Nut Chocolate Bark – dairy free and healthy

Seeds are highly nutritious and supportive to our health, so I like to include them in my diet on a daily basis. This snack involves either baking or grilling (known as broiling in North America) with a splash of tamari. Cooking in this way brings out a delicious depth of flavour, making them very more-ish. [...]

Gluten-free Tortilla Wraps with Tahini, Turmeric & Ginger Slaw

Gluten-free wraps are a real treat when you are leaving gluten out of your diet. My absolute favourite ‘wrap’ discovery recently, was a gluten-free, sun-dried tomato version that I stumbled upon during my trip to Florida last autumn. I also adore the organic black rice wraps by ‘Food for Life’, filled with my homemade tahini [...]
