When I first adopted a totally plant-based diet, some 21 years ago, things like cheesecake went completely fell by the wayside. Vegan recipes hadn’t yet taken the world by storm and in those earliest days of compassionate eating, I did keep my culinary creations more basic. However, a few years later at a vegan gathering, I was thrilled to learn that not only was it possible to create a vegan version of cheesecake, but it could taste amazing.
Falafel originated in the Middle East and has since become a popular alternative to meat. These days, it makes a regular appearance in fast food trucks and health food outlets all over the western world. It is typically deep fried, although I’ve always opted to create a much healthier baked or grilled alternative.
The recipe I am sharing here today, totally excites my taste buds with a tantalizing medley of warming spices. This ‘Thai Coconut Curry’, uses kaffir lime for a tangy kick; cardamom pods for an exquisite burst of sweet, spicy excitement; coriander, turmeric and lots of other delicious things. I use creamed coconut to give it a full tropical coconut experience (see below for more about the coconut that works best for this recipe).
Blueberries and lemon are a match made in heaven. They dance and twirl on the taste buds creating an exquisite medley of flavours. In this recipe, I’ve added them to one of my all time trusted and favourite ingredients: ‘creamed coconut’, to create a decadent, soft fudge. It’s very rich, yet you needn’t feel guilty, because all of the ingredients are good for you. It’s easy to feel satiated with only one or two small squares too. They make an excellent treat or gift, and with only 4 ingredients, are quick and simple to make.
When I first made these truffles I thought I was going to melt with delight. Perhaps it was a reflection of the multi sensory experience when I took my first bite; soft, sweet, rich, melt in the mouth chocolate covered sensual deliciousness. Difficult to imagine so much from such an easy recipe with only 5 ingredients. Yet, using good quality organic ingredients (including raw homemade chocolate), makes the essence of these truffles quite divine.

I've been making 'stir-steamed' veggie dishes for quite some time now. It's our super easy, healthy, 'fast food' go to meal. If I serve this with gluten free noodles, then I can literally have it on the table ready to eat within 10 minutes of deciding to make it. It's that quick!
